Sarah is the founder of Eatwell and has over 20 years’ experience working in nutrition and dietetics. Sarah has a degree in Human Nutrition and Dietetics from Trinity College, Dublin and a Masters in European Food Regulation. Sarah works with food companies on food legislation and product development as well as delivering workplace wellness sessions and nutrition courses. Sarah is an outstanding speaker on nutrition whether she is delivering a nutrition session or speaking on radio & television.
Nicholas P Kennedy
Nick Kennedy is the Honorary President of the Coeliac Society of Ireland, and has been a Director on the Board and its precursor, the Management Committee, since 2007.
He was appointed as an Honorary Consultant in General Medicine in the hospital in early 2020. He has been a member of the Dietitians Registration Board in CORU from 2013 -2021, serving as Chairman for the last few years. His long-standing commitment to the area of coeliac disease was recognised in being awarded for ‘Services to the Free-From Foods Industry’ in 2020.
Professor Nicola Ralph
Professor Nicola Ralph is a Consultant Dermatologist on the Specialist Register for Dermatology in Ireland. She is an honours graduate of the Royal College of Surgeons, Ireland. She commenced her training in Dermatology in the Mater Misericordaie University hospital where she developed a special interest in photodermatology. This led to her current undertaking of an MD, as principal investigator of a large European Multicentre study on photopatch testing (2015 to date).

Frances Buckley is an Applied Culinary Nutritionist and Chef with over 25 years of professional cooking experience in restaurants and diplomat catering.
Frances is a classically trained chef, having trained in Dublin College of Catering, Cathal Brugha Street. With over 5 years’ experience working in the area of sensory food science evaluation, with Teagasc and Diageo as part of their food sensory testing panels.

Justyna is a qualified Fitness Instructor & Certified Zumba® instructor, ZIN member for over 11 years now. She is also the only one and official Zumba ® Jammer for Ireland.
Dance has been a huge part of Justyna Mikolajczyk’s life. She dance throughout her pregnancy, praising Zumba classes for keeping her fit and healthy.
She has performed extensively in London, Poland, Portugal and Ireland. Justyna is also a presenter at the International Fitness Convention in Dublin each year and at THRIVE festival in 2020.
She loves teaching her classes around Dublin (city centre, Tallaght & Blackrock) and virtually. She is moving people toward joy and health.
Brendan Murphy, tax partner, has over 14 years’ experience working as a tax advisor to both corporates and individuals ensuring efficient tax planning and adherence to all tax compliance obligations are met for clients. As head of tax he deals with a range of private clients and corporates covering all compliance and advisory needs across all tax heads. Brendan’s experience extends to tax advice for corporates within areas such as group restructuring, financing structures, IP planning, merger and acquisitions and international expansion. Brendan also advises shareholders of businesses on exit, succession planning, expansion plans and investment. He has assisted many international companies relocating to Ireland focusing on areas such as funding, relocating employees and transfer pricing advice. Having previously worked in the UK he is well placed to help companies and individuals on cross border planning. His international experience is also useful for advising individuals on their tax implications of returning to Ireland following a period abroad. Brendan is both a member of the Chartered Accountants (ACA) and Tax Institute (CTA). He also holds diplomas in deferred tax and international tax. He is a regular contributor to publications released by the professional bodies he is affiliated to.
